Bring roast to room temp for 2 hours
Preheat oven to 450 or 500 (highest your oven goes)
Brush roast with olive oil
rub with seasonings
place fat side up in roasting pan
Cook for 5 mins per pound (med rare) 6 mins per pound (medium) 7 minutes per pound (medium well). I cook mine medium. Then turn oven off. Do NOT open oven door. Let sit in hot oven 2 hours. Slice and Serve.
Tip: slice ribs off first then cut roast as if boneless for nice easy slicing. Someone can nibble on the rib bones too. Can't waste one bite of a beautiful prime rib.
