I found this recipe online and am posting here because I want to try it. Haven't tried it yet but I do have a Jicama in the frig.
Peel the jicama and cut long "french fry" strips. Don't make them too thick, 1/2"... resembling somewhere between a shoestring and golden crinkle (okay, i'm busted, i'm an ore ida girl) Cut just like you would cut a potato if you were making homemade fries...
Spray quickly with Olive Oil Pam, place themin a bag with seasoning (I used garlic powder and and a pinch of cayenne (you can use stevia and cinnamon for a dessert fry)
Bake at 400 until crispy. I turn mine after about 10 minutes to get crisp on both sides. All ovens cook differently, so just keep an eye on them. They will shrink up a bit, but they will get a bit crispy, though not as crispy as real fries. Smaller, thinner pieces get cooked first and end up being more crispy... if you add some onion to the dish, and throw it all in a bowl, it is VERY similar to homefries!!!! They are a very surprising treat! Dip into some ff catsup and yum! I'm going to try to do the homefries in the pan with a little chicken broth in the morning to have along with my sunnyside up eggs :), they may be more authentic in the pan...i'll keep you posted!
The jicama fries would be very nice with a bunless burger... _________________

another one
Ingredients2 1/4 cups sliced jicama
1/4 cup canola oil
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp pepper
Directions
Slice jicama into 1/4" thick fries. Fry in 350 degree oil until golden.
Transfer cooked fries to paper towel lined dish.
Sprinkle cooked fries with salt, garlic powder, paprika, and pepper. Toss fries to coat evenly and serve immediately.
Great with low-carb ketchup. _________________

Jicama is da bomb I like it raw though with lime and salt or lime and chili pepper, it's really good
Kelly I tried making jicama fries and didn't like the cooked jicama raw is so much better. |

I loved it both ways! The fries don't get as crispy as potato ones but they were a good sweet tasting version. When I was cutting the fries up there were pieces that didn't make the "cut" and we nibbled on them raw. I need to make these again! _________________
